Billecart-Salmon is a family owned Champagne house since 1818 when Nicolas Francois Billecart and Elizabeth Salmon founded the winery. Ever since it has been a family owned, independent winery in the village of Mareuil-Sur-Aÿ. Today the whole family is still involved including the 95 year old grandfather who still takes part in the blending to make their house style of non-vintage Champagne consistent from year to year.
They own many vineyards but have to purchase some fruit to keep up with the demand for their wine. This makes them a négociant-manipulant (purchaser of grapes) instead of a récoltant-manipulant (grower). A few of their vintage or single vineyard wines come only from the vineyards they own. However, just because they purchase grapes does not mean they don’t pay close attention to the growing and handling of the grapes. They make sure every vineyard is properly taken care of to receive the best fruit possible. Their Champagnes are consistently of the highest quality and are favored among many a Champagne lover.
The Brut Réserve is a blend of Pinot Noir, Chardonnay, and Pinot Meunier from three different years (why it’s called a Non-Vintage) from the best parcels of fruit. The Blanc de Blancs Grand Cru (white from white) is 100% Chardonnay that comes from the five Grand Cru vineyards: Avize, Chouilly, Cramant, Mesnil-Sur-Oger, and Oger. It is a blend of two different years and shows off the beauty of Chardonnay. On the nose it has notes of hazelnut with pear and white peach, and has a palate of buttered brioche and minerality. $85.99/Sale $77.39
The production secrets of the Brut Rosé go back to the origins of the winery and have been handed down for sevent generations. It is a blend of Chardonnay, Pinot Meunier, and Pinot Noir vinified as a red wine. Adding red wine to a white wine base is very common for rosé Champagne production. For an extra special treat the 2004 Blanc de Blancs is gorgeous. It is a harmonious blend of the best Grand Crus sites of the Cote des Blancs: Chouilly for finesse, Avize for power, and MEsnil-sur-Oger for its structure and longevity. It is yellow gold in color with notes of toast, lemon peel, and sugar cookie. It is creamy and smooth on the palate with a slightly nutty, minerally, and long finish.
